Loaded Mexican Sweet Potato Fries

Ingredients:

  • 2 sweet potatoes, cut into wedges
  • 1 1/2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 Avocado
  • Lime Juice
  • 1 red onion
  • 1 tomato
  • 2 cloves garlic
  • 1 red chilli
  • Sour cream (if desired)

Method:

  1. Preheat oven to 180C. Chop sweet potatoes into chip sized pieces before placing on baking tray and coating with olive oil.
  2. Mix chilli powder, paprika, garlic powder and salt together before sprinkling over the potatoes to get them coated before placing in the oven for 30 minutes (or to desired crispness)
  3. Get started on the guacamole by mashing the avocado and lime juice together in a bowl until almost smooth.
  4. Chop up the tomato, onion and chilli into fine pieces. Crush garlic. Mix together with the avocado and lime juice.
  5. Once the fries are finished top them with guacamole and sour cream.
  6. ENJOY!
