Grilled Chicken Tostadas with Spicy, Smoky Sour Cream




  • 400g chicken thigh fillets
  • 1 tbsp oregano
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chilli powder
  • Juice and zest of ½ lime
  • Olive oil


  • Tomatoes, diced
  • Finely chopped fresh coriander
  • ¼ iceberg lettuce, shredded
  • Beans
  • Cheese
  • Avocado

Spicy, smoky Sour Cream

  • 200ml sour cream
  • 1tbsp Jalapeno peppers, finely diced and seeded
  • ½ Lime + zest
  • Handful of coriander
  • Salt and pepper, to taste
  • 1tbsp Smoky paprika


  1. Marinate the chicken: combine chicken, spices, lime and oil in a plastic bowl, mix well. Cover with cling wrap and stand in the fridge for up to 30 minutes. Overnight is best!
  2. To make the smokey sour cream, combine everything in a separate bowl with a whisk until thoroughly incorporated.
  3. To cook chicken, heat pan with oil and when hot cook for about 5 minutes, or until chicken is cooked through.

To serve take a tostada, add a dollop of spicy sour cream, add desired toppings and then add a small amount of chicken. Garnish with coriander.
