Sopes Recipe

Hola mi amigo!

If you’ve never been to Mexico, you’re about to with this fantastico receta! Sopes are one of the most authentico mexican street foods you’ll find in the central and southern parts of Mexico – where it was sometimes first known as pellizcadas.

They are handmade thick tortillas served with a range of vegetable and meat toppings. The base is made from a circle of fried masa and can also be used for tamales!

Here’s a quick and easy way to make your base:

You will need:

1 Kg of Masa (premium white corn dough)

Or if you would like to prepare the dough, you will need: 1kg of Yellow Corn Flour

  1. Whisk masa harina and salt together; stir enough water into mixture until dough is smooth and holds together. Form dough into 2-inch balls. Flatten each ball to a 1/2-inch thick circle.
  2. Heat oil to 180 – 200 degrees in a deep-fryer or a deep saucepan.
  3. Fry dough in the hot oil until sopes are just lightly browned, about 20 – 30 seconds on each side. Remove sopes with tongs and place on a paper towel-lined plate; cool just until sopes can be handled. Pinch the edges of each sope together forming little ‘boats’. Return to hot oil and fry until golden and cooked through for 1 minute.

Once your bases are ready, you can top this with refried beans followed by your favorito choice of meat or spicy potato. And last but not least, add some mexican cheese and cream!

We also make these at our restaurant in North Melbourne amigos. Open 6 days a week.

Buen provecho!
