How do you make a burrito even better? Deep fry it off course! That is how one of our favourite mexican dishes the Chimichanga was created!
The chimichanga is a mixture of meat, vegetables and spices inside of a crispy tortilla, covered in melted cheese and served on a bed of lettuce or with a big dollop of guacamole on top. Have we won you over yet? Keep reading below to learn how to make this delicioso meal!
To make Chimichanga you will need:
- El-Cielo 18cm white corn tortillas
- 1 Chicken breast
- ½ Red capsicum
- ½ Green capsicum
- 1 tomato
- ½ Onion
- 2 Cloves of garlic
- Refried beans
- Sour cream
Begin by preparing the chimichanga filling. Finely chop garlic before slicing capsicum, onion, tomato and chicken breast into slithers. In a bowl, separately season chicken with salt, pepper and chilli powder and set aside.
In a pan drizzle a tablespoon of olive oil and begin frying the garlic and onions. When they begin softening, pour in ¼ cup of water and toss in the seasoned chicken. The water will ensure your chicken is stays juicy.
When you see the chicken has turned from its pink colour to white, throw in the capsicum and tomatoes and leave them to simmer together for 20 minutes.
When chicken is completely cooked, turn off the flame and set aside to cool. In a small saucepan, heat your refried beans until they become warm. On a skillet, lightly fry your El-Cielo tortillas. On a flat surface, begin to assemble your chimichanga.
Spread an even layer of refried beans in the inner part of your tortilla. On top of that add the chicken and vegetable medley.
Fold the tortilla up and in a deep pan pour a shallow pool of vegetable oil let it heat then shallow fry your burrito on both sides.
Serve on a bed of lettuce and top off with either sour cream, cheese, guacamole or all of the above!
